Limaq is a cocktail bar and contemporary restaurant in San Isidro, Lima. Its name comes from “the one who speaks.” For us, every ingredient has a story, and we seek to understand it and bring it to its fullest expression.

We explore new ways to experience Peru through local ingredients, research, and technique. Precision complements the ingredients without overpowering them, while the bar, kitchen, and hospitality are all part of the same experience.

Joel Chirinos has built a career spanning more than two decades in the Peruvian cocktail scene. As the founder of Limaq and a three-time winner of World Class Peru—in 2014, 2016, and 2025—his work explores new ways of experiencing Peru through its products, territories, and research.

His perspective stems from direct contact with ingredients, producers, and communities across different regions of the country. Through travel, research, and development, he seeks to understand each ingredient before bringing it to the bar, using technique as a tool for precision rather than as the main focus.

Throughout his career, he has been part of leading projects in Peruvian hospitality; he served as Brand Ambassador for Diageo Peru, and in 2017 completed an internship at High Five Bar in Tokyo. His work has been recognized by Summum and Forbes Peru, among other publications focused on gastronomy and creativity.

At Limaq, this vision finds its most personal expression: a concept where mixology, cuisine, and hospitality come together to explore a contemporary perspective on Peru.
